Maize makes up a significant portion of the diet in many parts of Zambia, and as demand for convenient snack foods grow, so does interest in opportunities to fortify maize-based foods to make them more nutrient-rich. In this study, researchers examined the nutritional, physical, and antinutritional properties of five maize-based snacks and collected household data on consumer preferences for the snacks.
