How do consumer choices about food and diet affect the overall environmental impacts of a food system? How do these choices and impacts differ across contexts? This paper analyzes the environmental impact of diets and food choices in rural, urban, and peri-urban districts in Northern Vietnam, including the average greenhouse gas emissions from producing different types of food, blue water use, diet diversity, own food production, and diet and health priorities. Guided by the survey results, the authors offer insights into interventions for particular regions that can reduce undernutrition and improve diet quality without significant increasing diet-related environmental impacts.
